چکیده
Near-infrared diffuse reflectance spectroscopy (NIR-DRS) was utilized to develop an algorithm using approximately 18 wavelengths spanning 480 650 nm determine oxymyoglobin (OxyMb), deoxymyoglobin (DeoxyMb), and metmyoglobin (MetMb) contents on beef longissimus lumborum muscles. Daily changes in subsurface myoglobin redox forms were evaluated for 7 d NIR-DRS compared with the surface color as assessed by a HunterLab MiniScan spectrophotometer reference modality. Both measurements revealed that MetMb increased steadily over duration of display, showing high correlation (R2 = 0.91) between 2 methods. Comparatively, whereas OxyMb have decreased period indicated much later onset apparent decrease OxyMb, resulting moderate 0.64) No found methods regarding DeoxyMb display. The newly developed has potential alternative method assessment postrigor skeletal muscle.

The use of visible and near infrared reflectance spectroscopy to predict beef M. longissimus thoracis et lumborum quality attributes.
Visible and near infrared reflectance spectroscopy was used to predict pH at 24h (pH24) post-mortem, sarcomere length (SL), cooking loss (CL), Warner-Bratzler Shear Force (WBSF) and colour parameters (L(∗), a(∗), b(∗)) in beef cattle samples. Samples from M. longissimus thoracis et lumborum from 30 bulls were aged at 4°C for 1, 3, 7 and 14 days and analysed for pH, SL, CL, WBSF and colour. NIRS...
متن کاملNear-infrared reflectance analysis for predicting beef longissimus tenderness.
Near-infrared reflectance spectra (1,100 to 2,498 nm) were collected on beef longissimus thoracis steaks for the purpose of establishing the feasibility of predicting meat tenderness by spectroscopy. Partial least squares (PLS) analysis (up to 20 factors) and multiple linear regression (MLR) were used to predict cooked longissimus Warner-Bratzler shear (WBS) force values from spectra of steaks ...
متن کاملNoninvasive prediction of glucose by near-infrared diffuse reflectance spectroscopy.
BACKGROUND Self-monitoring of blood glucose by diabetics is crucial in the reduction of complications related to diabetes. Current monitoring techniques are invasive and painful, and discourage regular use. The aim of this study was to demonstrate the use of near-infrared (NIR) diffuse reflectance over the 1050-2450 nm wavelength range for noninvasive monitoring of blood glucose. METHODS Two ...
متن کاملOn-line classification of US Select beef carcasses for longissimus tenderness using visible and near-infrared reflectance spectroscopy.
The current experiment was conducted to evaluate the on-line application of visible and near-infrared spectroscopy (VISNIR) to US Select carcasses during commercial beef carcass grading procedures to predict tenderness of longissimus steaks after 14 days of refrigerated storage. A regression model was calibrated using 146 carcasses and tested against an additional 146 carcasses. Carcasses were ...
متن کاملDetermination of Protein and Moisture in Fishmeal by Near-Infrared Reflectance Spectroscopy and Multivariate Regression Based on Partial Least Squares
The potential of Near Infrared Reflectance Spectroscopy (NIRS) as a fast method to predict the Crude Protein (CP) and Moisture (M) content in fishmeal by scanning spectra between 1000 and 2500 nm using multivariate regression technique based on Partial Least Squares (PLS) was evaluated. The coefficient of determination in calibration (R2C) and Standard Error of Calibra...
